Kaiseki course menu featuring a fusion of Japanese and Western culinary traditions, showcasing Kuma Valley's finest seasonal ingredients. Please note that our menu does not include grilled ayu (sweetfish). However, during ayu season (June through October), you can add grilled wild ayu to your order as a special request. Please inform us in advance if you would like to enjoy this seasonal delicacy.

The Kuma Valley is truly a paradise for gourmet lovers, and our mission is to bring out the full, unique flavor of each ingredient. This is the essence of our culinary philosophy.

To stay true to this belief, our staff members grow our rice themselves, working the land with their own hands. This rice, grown with Kumamoto's famous spring water, is then cooked in that very same spring water. All this, so that you can savor the pure, unadulterated flavor of the rice.

Our chefs are committed to continuously learning their craft, regularly engaging with local producers, distributors, and culinary experts to explore the endless possibilities of ingredients and cuisine.

Our shokado-style bento box, featuring a variety of colorful dishes made with our prized rice and the freshest seasonal ingredients, is particularly popular with our international guests. Begin your day with house-made juice, crafted with locally sourced fruits, to awaken your senses and gently rouse your appetite. Our small hot pot features a unique take on a local Hitoyoshi specialty, soba dango jiru, re-imagined with a creamy milk broth.

At Ayunosato, we offer pairings of Kuma Shochu with our kaiseki-style cuisine courses. We offer a wide selection of Kuma Shochu, including Ayunosato, Okami Sakura, and Ohishi, among many others.

The 27 distilleries located in the Kuma Valley each produce several distinct brands of shochu, for a total of over 200 labels in total. Kuma Shochu is characterized by its mellow aroma and rich, full-bodied flavor and covers a diverse range of tastes.

It pairs well with a wide variety of cuisines, complementing both Japanese and Western dishes. Enjoy Kuma Shochu before dining to stimulate your appetite, or pair it with your meal, savoring it warm, straight, on the rocks, or however you prefer. It's worth noting that rice shochu such as Kuma Shochu contains an enzyme that may help dissolve blood clots, making it both a delicious and potentially health-promoting beverage.
